This exciting course is about putting your business hat on and learning how to develop new food products or services for today’s market. Build on your Level 5 cooking or baking knowledge and learn the process of taking a foodie idea from concept through to reality, along with a range of core management skills.
Learn invaluable business strategy skills and the latest food industry trends as you research, develop and design a new food product or service - pitching it, testing it and tweaking it to get it ready for market. The course includes a 20 week paid internship, where you’ll put your new business and management knowledge to the test in a real hospitality or food company.
A TASTE OF WHAT YOU'LL EXPERIENCE
Culinary practice and showcasing food
You will be busy cooking, developing menus, styling food, learning how to photograph the food and creating a blog to showcase it all as you learn about customer engagement and marketing strategy.
Food trends and management skills
You’ll look at current trends and developments within the global culinary industry. We’ll teach you about core management skills, duties and responsibilities in the hospitality sector, including finance, operations, sales and marketing.
Develop a commercial food product or service
Build the skills to develop new food products that meet today’s customer demands. You’ll learn about generating an idea, how to pitch it to people and the process of concept development including researching the market and doing proper financial analysis.
Design and test the food product or service
Develop your product or service further, test the market and get feedback from customers and stakeholders. This could be at The Culinary Collective, at a food market, food truck or even as a pop-up restaurant. You’ll then refine your product and work out whether it’s commercially viable or not.
20 week internship
Gain real work experience by completing a paid 20 week internship in a commercial hospitality or food business. You’ll apply your new knowledge to real life business issues, situations, problems and experiences - making you highly employable or ready to go out on your own.

You need to be 18 or older
Have completed the New Zealand Diploma in Hospitality Management Level 5, or New Zealand Diploma in Cookery (Advanced) Level 5, or relevant industry experience
If you are an international student, you must also have an English level of 6 IELTS or equivalent with no band score lower than 5.5.
