UCOL’s New Zealand Certificate in Manaaki Marae - Te Nihowera, Te Ringawera (Level 3) sees preparation and cookery of kai Maori interwoven with te reo Maori and tikanga, delivered in a kaupapa Maori context.

Course Information

This programme consists of 60 credits. The courses includes:

He Kaitiakitanga o nga Kai Maori (15 Credits)

Develop understanding and apply traditional kaitiakitanga (guardianship) concepts in mahinga kai. Learn how to how to source, gather, harvest and prepare a range of kai Maori (food), both traditional and contemporary. You’ll also learn to use te Reo Maori to identify different kai Maori.

Whanaungatanga (15 Credits)

Learn to work collectively and collaboratively in a team environment to express whanaungatanga (kinship/a sense of family connection) in a marae setting.

Te Tikanga Haumaru (10 Credits)

This course covers health and safety, food safety, and personal hygiene requirements for the wharekai. You’ll learn how to identify food preparation hazards in the wharekai and use food safety techniques to ensure cleanliness of food production areas.

Te Mahi Wharekai (20 Credits)

Learn to plan an event and prepare, cook and serve basic dishes in the wharekai. In terms of event planning, this course covers powhiri/whakatau, menu, and manaakitanga (hospitality) of manuhiri (guests).

Career & Study Outcomes

Graduates will have the skills and knowledge to work as apprentices and trainees, or in similar entry-level roles in all sectors of the hospitality industry, including roles as:

  • kitchen steward
  • food prep assistant
  • cafe assistant
  • barista
  • commis/junior cook
  • ringawera

Graduates will also have the skills and knowledge to support whanau, hapu, iwi, and hapori by working, under limited supervision, in the wharekai and/or kauta.

Education Pathway

Graduates of this programmes could go on to study further cookery and hospitality programmes including the

  • New Zealand Certificate in Cookery (Level 4)
  • New Zealand Certificate in Food and Beverage Service (Level 3).

This course delivered in Taumarunui campus.

English language Requirement: IELTS - General or Academic: Score of 5.0 with no band lower than 5; TOEFL (iBT) - Score of 35 (with a writing score of 14); Cambridge English Qualifications - B2 with score of 154; no less than 154 in each skill; OET - Minimum Grade C or 200 in all subtests; NZCEL - Level 3 (General); and Pearson Test of English (Academic) - Score of 36 with no band less than 36.

Applicants whose first language is not English must have an IELTS (or equivalent including TOEFL) score of 5.0 with no band score lower than 5. TOEFL (iBT) score of 35 (with a writing score of 14); Cambridge B2 First (for Schools), C1 Advanced, C2 Proficiency: B2 with score of 154; no less than 154 in each skill; OET: Minimum Grade C or 200 in all subtests; PToE (Academic) score of 36 with no band less than 36. The English Proficiency test is accepted for English language entry into all UCOL programmes.
